Chubby Skewers, Maroon, Horror Vibes among new Las Vegas Dining Scene
A grilled-to-order skewer bar, new restaurants from star chefs, and vegan nigiri and sushi rolls are making waves in the latest developments in the Las Vegas dining scene.
Chubby Skewers

Chubby Skewers, the newest addition to the Vegas dining landscape from the Chubby Group, is scheduled to open its doors in June at 4525 Spring Mountain Road, Suite 105. Situated next to Chubby Cattle BBQ, a popular yakiniku spot, Chubby Skewers draws inspiration from Dongbei-style cuisine from northeast China. The menu features grilled-to-order skewers along with street food classics like spicy cold noodles, sizzling tofu, and duck tongue. The ambiance of the restaurant is reminiscent of a back-alley barbecue joint with vibrant neon lighting, red and yellow hues, and late-night operating hours from 5 p.m. to 3 a.m. daily.
Other notable restaurants in the Chubby Group's portfolio include the original Chubby Cattle BBQ, Mikiya Wagyu Shabu House, and The X Pot at The Venetian.
Maroon

Chef Kwame Onwuachi, a James Beard Award winner and renowned chef from New York City, is set to open a new restaurant at Sahara Las Vegas, replacing Bazaar Meat. The restaurant, named Maroon, is slated to open in late 2025. Maroon, a Caribbean steakhouse, pays homage to the Maroons, formerly enslaved Africans who sought refuge in the mountains of Jamaica in the 17th century. The cuisine at Maroon celebrates jerk cooking, a technique often attributed to the Maroons, and reflects Onwuachi's Jamaican heritage.
Ai Pazzi by Fabio Viviani
Fabio Viviani, the acclaimed chef, restaurateur, and "Top Chef" star, is collaborating with JW Marriott Las Vegas-Rampart Casino to introduce Ai Pazzi, an Italian restaurant, in the summer of 2025. This venture is part of Viviani's initiative to revamp the property's dining offerings, which will also include a new oyster bar. With a culinary career spanning over 40 restaurants and concepts since gaining fame on "Top Chef" in 2008, Viviani continues to make waves in the culinary world.
Basil Vegan Thai & Sushi

Basil Vegan Thai & Sushi, located near Bermuda Road at 500 E. Windmill Lane, Suite 145, is the brainchild of Chef Mindy Lim from Daikon Vegan Sushi. The menu at Basil Vegan showcases a variety of vegan delights, including nigiri, sushi rolls, tofu larb, fried rice, curries, pad thai, and chef's specials.
Horror Vibes Coffee
Horror Vibes Coffee, a new haunt at 4480 Paradise Road, Suite 300, offers a unique horror-themed coffee experience. Originating from Los Angeles, this Vegas location features an array of coffee beverages, chai, tea, lemonade, and whimsical concoctions like cotton candy milk. Embracing the tagline "where the ghouls gather," Horror Vibes Coffee caters to those with a taste for the macabre.
Grey Witch
Grey Witch, a fresh establishment from the minds behind Red Dwarf and Fat Cat bars, has emerged at 722 W. Sunset Road in Henderson. Boasting a dual persona, Grey Witch provides all-ages dining in the front area, a moody bar section, and a hidden speakeasy named Dark Arts. The venue also hosts live music performances in a separate space with a capacity of approximately 400 guests.
Prowl
Prowl, a new bar managed by the team behind Stray Pirate, is scheduled to open in June at 1323 S. Commerce St. in downtown Vegas. Renowned mixologist Christ Gutierrez, serving as the general manager of Prowl and Stray Pirate, is curating the cocktail menu for this exciting new venture.
Shàng Artisan Noodle
Construction is underway at the new location of Shàng Artisan Noodle at 6491 N. Durango Drive, Suite 140, in Centennial Hills. Known for its hand-pulled and knife-shaved noodles served in flavorful soups and dishes, Shàng Artisan Noodle is expected to debut in early 2026. The restaurant currently operates three other locations in Las Vegas.
Las Vegas Restaurant Week

The annual Las Vegas Restaurant Week, benefiting Three Square Food Bank, will run from Monday through June 13. Over 250 restaurants across the valley will offer prix fixe menus for breakfast, brunch, lunch, or dinner, with a portion of each meal's cost donated to Three Square. The event aims to support those facing food insecurity in the community.
Las Vegas Restaurant Week 2024 raised substantial funds, providing over 1.14 million meals to residents in need. Since its inception in 2007, the event has contributed more than 10 million meals to combat food insecurity in the Las Vegas area.
